The two-zone fire method is a great way to cook a number of items on an outdoor charcoal grill. This method applies both direct and indirect heat to the food items on the grill. In order to achieve the two-zone method, fill an aluminized steel chimney starter and allow the coals to turn gray. Next, spread the coals into a single layer across one half of the charcoal grate. Finally, put the cooking grate in place and allow the coals to burn down.
